Mashed rutabaga

 
Mashed Rutabaga.

Ok so I have officially found my new favorite thing....a rutabaga. I honestly didn't even really know what it was until yesterday. I had heard of it before, but truthfully it was from the name of a character on my daughters Strawberry Shortcake movie. We received our box of veggies this week and in it there were about 5 rutabaga. I had no idea how to cook them and I read somewhere to cook them like you would mashed potatoes. They literally taste exactly like mashed potatoes I am not kidding. Go to the store and try them!
Use:


4-5 peeled and chopped rutabaga,
Salt and pepper,
1/4 cup coconut milk.


1. Boil in water until soft. They took a while to soften.
2. Pour out water and put in food processor with coconut milk and seasonings. Process until the consistency of mashed potatoes.
3. Serve with anything.

    Never thought about mashing them! Great idea, my kids love rutabaga’s i usually roast mine with a mixture of diced sweet potatoes and turnips. Defiantly going to give this a try!
